Wow..you are doing so much better. And you look fantastic. Love the new you! I think the chicken salad thing is not necessarily bad–it’s healthy and you like it…you just run the risk of getting bored. You could add different protein source like tuna (i’m guessing that’s going to get a yuck response) or sliced turkey, also lean beef is good if you feel like cooking it. You can grill it on the George Forman without adding additional fat :). Also beans are really good. You can do a Mexican style salad with black beans and corn and salsa, maybe a little cheese. Still easy to fix. White beans and chickpeas are good too. You can add flavor with non-fat dressings and the like. Now I remember that you were adding some of that three bean mixture to your salads. That’s great. If you add a bit more of those and include some low fat cheese and a few nuts or seeds (sunflower seeds perhaps…do you like them?) to them you get a complete protein. I also can’t remember what you said about cottage cheese–I think you like it OK. It’s so high in protein (and calcium, which we women need) and is great in salads. Also seasoned tofu is good. Soy proteins are also recommended for women and there is some really tasty tofu on the market–even better than what we had last night–that is great in salads. Next time you are over you should try some. Are you including veggies other than lettuce in your salads? I think you said you were adding broccoli. That’s great. You can also add fun things on occasion like artichoke hearts. How do you feel about spinach? Raw spinach has tons of vitamins and minerals and is a lot more nutritious than plain old lettuce. OK, that’s probably way more information than you needed.
Hope you have a good day. I’ll talk to you soon.

Thanks Kiko! I forget about things like adding turkey & spinach. I do like both & I know they are good. Mexican salad sounds good too! I’ll have to think about the tofu & tuna. Cottage cheese - I haven’t had that in awhile - I do like it & usually add vegetables to it & I eat the fat-free kind so it is a low-calorie lunch. Great suggestions!
